Corte Adami builds its Amarone through the traditional appassimento drying of selected Valpolicella grapes, concentrating fruit without losing the wine's sense of balance.
The family estate works across Soave and Valpolicella and has developed its own estate bottlings after generations of grape growing.
Estate vines in eastern Valpolicella occupy clay-and-limestone sites; Corvina, Corvinone and Rondinella are gently dried before fermentation.
Roast lamb, grilled beef, wild mushrooms or a savoury slow-cooked dish.
Serve around 16–18°C, with air for youthful structured bottles.
The producer describes extended drying and two years in French oak, a process quite different from standard Valpolicella.
